- 1 lb ground beef or ground turkey for a lighter option
- 1 packet taco seasoning
- 1 can 15 oz diced tomatoes
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz corn, drained
- 1 can 15 oz beef broth (or vegetable broth)
- 1 small onion chopped
- 1 bell pepper chopped
- 2 cloves garlic minced
- 1 cup shredded cheese optional
- 1 bag Fritos chips
- Sour cream optional
- Fresh cilantro optional
- Lime wedges optional
Sauté the vegetables: In a large pot, heat a little oil over medium heat. Add chopped onion, bell pepper, and garlic. Cook until softened (about 5 minutes).
Cook the beef: Add ground beef to the pot and cook until browned. Drain any excess fat.
Add the ingredients: Stir in taco seasoning, diced tomatoes, kidney beans, corn, and beef broth. Bring to a simmer.
Simmer: Let the soup cook for 15-20 minutes, stirring occasionally.
Serve: Ladle the soup into bowls. Top with Fritos chips, shredded cheese, sour cream, cilantro, and lime wedges if desired.
