  • 3 large eggs
  • 1/2 cup unsalted butter softened
  • 1 cup whole milk
  • Gel food coloring pink, purple, blue, yellow

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk or heavy cream
  • Gel food coloring for pastel shades

Instructions
 

Prepare the Cake Layers:

  • Preheat your oven to 350°F (175°C) and grease and flour your cake pans.
  • Mix cake batter according to package instructions or prepare homemade vanilla cake batter.
  • Divide the batter into separate bowls and color each portion with a different gel food coloring to create a rainbow effect.
  • Pour the colored batter into cake pans, layer by layer, and bake for 25-30 minutes or until a toothpick comes out clean.
  • Allow the cakes to cool completely before frosting.

Prepare the Buttercream Frosting:

  • Beat the softened butter in a mixer until smooth and creamy.
  • Gradually add powdered sugar, 1 cup at a time, mixing until smooth.
  • Add vanilla extract and milk, continuing to mix until the frosting is fluffy and spreadable.
  • Divide the frosting into separate bowls and color each with food coloring to match the colors of the unicorn mane (pink, purple, blue, yellow).

Assemble the Cake:

  • Level the cooled cake layers with a serrated knife for a smooth finish.
  • Apply a crumb coat of frosting to seal in any loose crumbs and refrigerate for 15 minutes.
  • Generously frost the cake with a layer of buttercream, smoothing it with a spatula.
  • Use piping bags and various tips to create rosettes and swirls on top and along the sides for the unicorn’s mane.

Add Unicorn Details:

  • Craft the unicorn horn and ears using fondant, or opt for alternative materials like modeling chocolate or edible glitter.
  • Position the horn and ears on top of the cake and finish with a sprinkle of edible glitter for a magical touch.
