Ingredients
  

  • 1 cup fresh crab meat
  • 1 cup heavy cream
  • 4 large egg yolks
  • 2 tbsp unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika optional
  • 1 tbsp brulee sugar or regular sugar

Instructions
 

  • Preheat the oven to 325°F (165°C). Place 4 ramekins in a baking dish.
  • Heat the cream in a saucepan over medium heat until warm. Stir in butter, salt, pepper, and smoked paprika (if using).
  • Whisk the egg yolks in a bowl. Slowly add the warm cream mixture to the eggs, stirring constantly to temper the eggs.
  • Add crab meat to the mixture and stir gently.
  • Pour the mixture into the ramekins, filling them up evenly.
  • Bake for 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
  • Cool the brulees to room temperature, then refrigerate for at least 1 hour.
  • Top with sugar and caramelize the sugar with a kitchen torch until golden brown.
  • Serve and enjoy your delicious crab brûlée!
