- 1 cup fresh crab meat
- 1 cup heavy cream
- 4 large egg yolks
- 2 tbsp unsalted butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika optional
- 1 tbsp brulee sugar or regular sugar
Preheat the oven to 325°F (165°C). Place 4 ramekins in a baking dish.
Heat the cream in a saucepan over medium heat until warm. Stir in butter, salt, pepper, and smoked paprika (if using).
Whisk the egg yolks in a bowl. Slowly add the warm cream mixture to the eggs, stirring constantly to temper the eggs.
Add crab meat to the mixture and stir gently.
Pour the mixture into the ramekins, filling them up evenly.
Bake for 25-30 minutes, or until the custard is set but still slightly jiggly in the center.
Cool the brulees to room temperature, then refrigerate for at least 1 hour.
Top with sugar and caramelize the sugar with a kitchen torch until golden brown.
