Ingredients
  

  • 4 large bell peppers any color
  • 1 lb ground meat beef, turkey, or chicken
  • 1 cup cooked rice or cauliflower rice for a low-carb option
  • 1 cup shredded Colby Jack cheese
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Prepare the peppers: Slice the tops off the bell peppers and remove seeds. Place them in a baking dish.
  • Cook the filling: Heat olive oil in a skillet. Sauté chopped onion and garlic until soft. Add ground meat and cook until browned. Stir in cooked rice, cumin, chili powder, salt, and pepper.
  • Stuff the peppers: Spoon the filling into each pepper, packing it tightly.
  • Top with cheese: Sprinkle shredded Colby Jack cheese on top of each stuffed pepper.
  • Bake: Place the peppers in the oven and bake for 25-30 minutes, until the cheese is melted and bubbly.
