- 4 large bell peppers any color
- 1 lb ground meat beef, turkey, or chicken
- 1 cup cooked rice or cauliflower rice for a low-carb option
- 1 cup shredded Colby Jack cheese
- 1 small onion chopped
- 2 cloves garlic minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for cooking
Preheat oven to 375°F (190°C).
Prepare the peppers: Slice the tops off the bell peppers and remove seeds. Place them in a baking dish.
