Coconut Cake

  • 1 1/2 cups coconut flour
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup coconut sugar
  • 4 eggs
  • 1/2 cup coconut milk
  • 1/4 cup coconut oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

Instructions
 

Coconut Cookies

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the shredded coconut, coconut flour, coconut sugar, and baking powder.
  • Add the melted coconut oil, egg, vanilla extract, and a pinch of salt. Stir until well combined.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, slightly flattening each ball.
  • Bake for 8-10 minutes or until the edges are golden brown. Allow the cookies to cool before enjoying.
  • Tip: Add chocolate chips or a sprinkle of cinnamon for an extra flavor boost!

Coconut Muffins

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
