Place the beef in the hot pan and sear each side for 2-4 minutes (depending on thickness) until a golden, crispy crust forms.
For a medium-rare finish, cook for about 4-5 minutes per side. Use a meat thermometer to check: 130°F (54°C) is perfect for medium-rare.
