Ingredients
  

  • 2 cups cooked day-old rice preferably chilled
  • 2 tablespoons oil vegetable or sesame oil
  • 2 large eggs lightly beaten
  • 1 small onion finely chopped
  • 1/2 cup mixed vegetables peas, carrots, and beans
  • 1-2 green chilies chopped (optional for heat)
  • 2-3 sprigs fresh curry leaves
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garam masala or curry powder
  • Salt to taste
  • Fresh cilantro chopped (for garnish)
  • Lime wedges for serving, optional

Instructions
 

Prepare the rice: Use day-old rice for the best texture. If cooking fresh rice, let it cool completely before using.

    Cook the eggs: Heat 1 tablespoon of oil in a large pan or wok over medium heat. Add the beaten eggs and scramble until fully cooked. Set aside.

      Sauté the vegetables: In the same pan, add another tablespoon of oil. Sauté onions, mixed vegetables, and green chilies (if using) for 3-4 minutes until softened.

        Add spices and soy sauce: Stir in the soy sauce, garam masala, and curry leaves. Cook for another 1-2 minutes to release the flavors.

          Combine rice and eggs: Add the day-old rice to the pan and mix well. Stir-fry for 5-7 minutes, ensuring everything is evenly combined and heated through.

            Season and garnish: Add salt to taste. Garnish with fresh cilantro and serve with lime wedges.
