- 2 tablespoons oil vegetable or sesame oil
- 2 large eggs lightly beaten
- 1 small onion finely chopped
- 1/2 cup mixed vegetables peas, carrots, and beans
- 1-2 green chilies chopped (optional for heat)
- 2-3 sprigs fresh curry leaves
- 1 tablespoon soy sauce
- 1/2 teaspoon garam masala or curry powder
- Salt to taste
- Fresh cilantro chopped (for garnish)

Prepare the rice: Use day-old rice for the best texture. If cooking fresh rice, let it cool completely before using.
Cook the eggs: Heat 1 tablespoon of oil in a large pan or wok over medium heat. Add the beaten eggs and scramble until fully cooked. Set aside.
Sauté the vegetables: In the same pan, add another tablespoon of oil. Sauté onions, mixed vegetables, and green chilies (if using) for 3-4 minutes until softened.

Combine rice and eggs: Add the day-old rice to the pan and mix well. Stir-fry for 5-7 minutes, ensuring everything is evenly combined and heated through.
