- 1 onion chopped
- 4 garlic cloves minced
- 2 carrots chopped (optional)
- 2-3 celery stalks chopped (optional)
- 4 cups chicken broth or water
- 2-3 bay leaves
- 1 tsp Cajun seasoning
- 1 tsp smoked paprika
- Salt and black pepper to taste
- Fresh thyme optional
- Olive oil for browning optional
Prepare the Neck Bones: Season the neck bones with Cajun seasoning, smoked paprika, salt, and pepper.
